Quick Spelt Bread January 22nd, 2012

I don’t own a bread-maker and I’ve never even considered making homemade bread because I’m petrified of trying anything with yeast.  I usually buy Spelt bread from Whole Foods, so this recipe from Anja’s Food 4 Thought caught my eye.  I immediately looked for the yeast in the ingredients and there was none!  That means I would actually try this recipe!  It’s quick and easy…just like the name of the bread!

SPELT QUICK BREAD
1 1/2 cups whole spelt flour
1/2 cup rolled oats
1 teaspoon salt
1 teaspoon baking soda
1/4 cup mixed seeds (divided)
1 cup buttermilk
Yields 1 loaf

Preheat oven to 200C/400F. Line loaf tin with parchment paper.

In a bowl, combine spelt flour, oats, salt and baking soda. Stir in mixed seeds (keeping 1 tablespoon aside). Form a well in the middle of the flour mixture. Add buttermilk and gently stir until well combined. Transfer batter to prepared loaf tin. Level the top and sprinkle with remaining seeds. Bake for 30 minutes or until cake tester comes out clean. Let cool for a few minutes in the pan, then cool completely on wire rack.

To Market, To Market

Dallas Market Center, FINDS temp show January 17th, 2012

I have some exciting news to share!  I will be participating in the latest temporary venue at Dallas Market Center this weekend with three of my most creative friends…Dana Pugh (Tattered Style), Gloria Burson (A Modern Glo) and Lisa Johnson (Cut and Paste).  This creative temp show is called Vintage Home FINDS and you don’t want to miss what we have in store for you!

We will be showing under the name of my vintage line’s name, Stash {vintage finds} and you’ll find us in the North Hall, along with other vintage dealers and Trailer Cakes in their vintage airstream!  We hope to provide interesting industrial pieces perfect for you to use as display in your store, as well as art to resale.  We’ll be available to help you come up with one-of-a-kind display and styling to give your space a facelift for the new year!   If a personal consultation is what you need, just ask, and we can arrange a visit to your retail space.

To make FINDS even more fun, all buyers are invited to participate in the “On The Road To FINDS Giveaway”!  Participants can pick up FINDS “Road Maps” at information booths, Red Rooms and registrations areas to start on their journey though the Temp Show. Coming Clean

winter detox superfoods salad January 5th, 2012

One of my new favorite blogs is Yummy Mummy!  She recently posted a detox salad that I can’t wait to try and couldn’t wait to share it with you!  Cleanse away, my friends!

Winter Detox Superfoods Salad
serves 4
1 small bunch broccoli, raw or quickly blanched
2 tangerines, peeled and segments separated, plus 1 for dressing
1 pomegranate, seeded
1/4 cup shaved or thinly sliced fennel
1 avocado, sliced
1/4 cup walnut pieces
extra virgin olive oil
Toss first 6 ingredients together in a medium bowl. Drizzle olive oil and juice of one tangerine over salad. Season with salt and pepper to taste.

Rum Pa Pum Yum

Amy's Mom's Famous Rum Cake December 23rd, 2011

I’m so excited to share this recipe with you!  This is my friend and neighbor Amy’s (of the blog, House of Wentworth) mother’s recipe.  Her mom makes this every Christmas for her family’s friends and these rum cakes have become well known, and highly anticipated, in Odessa.  I’m so glad that Amy is starting that tradition here in Dallas and I’m especially happy that Amy lives three doors down and I get mine warm…fresh out of the oven!

I couldn’t believe it when I found out that this recipe is made with a box cake mix!  It’s so moist and tastes like it took all day to put together…

Amy’s Mom’s Famous Rum Cake

2 loaf pans

1 box of Duncan Heinz butter cake mix

Pam for baking to spray pans (oil & flour)

1 package of Jello instant vanilla pudding mix (smallest size box)

1/2 cup water

1/2 cup vegetable oil (Crisco pure vegetable oil)

1/2 cup light rum (not dark)

4 eggs

pecans (optional)

Glaze:

1 cup sugar

1 cup butter

1/2 cup of rum

Mix all ingredients with mixer and add eggs one at a time.  Beat for 4 minutes after eggs are added.  Spray loaf pans with Pam and flour.  Optional:  Chop pecans and spread a thin layer at the bottom of the pans.  Pour in batter.  Bake at 325 for 1 hour.  When done let stand 3 minutes while you heat glaze on the stove.  Poke deep holes all over the cake.  Pour glaze over the cake and let stand 20 minutes to soak.

Prep time:  1.5 hours

Makes 2 cakes.

You will not believe how moist this cake is!  I swear you could literally squeeze rum out of it….mmmmmm….it’s delicious!  Your friends will love it!  I think I’ll start my own rum cake tradition!

Who doesn’t love apple pie…but we hate what the fattening crust does to our waist line…

Here’s a way to get the sweet taste of pie without those nasty calories!  This recipe is perfect for those chilly fall nights ahead!

Crock-Pot Baked Apples

1/4 cup brown sugar
1/4 cup walnuts, chopped
2 tablespoons trans-fat free margarine
1 teaspoon cinnamon
6 Gala or Macintosh apples, cored
1/2 cup apple juice or apple cider
2 tablespoons orange liquor (optional)

Preheat a large crock-pot on high heat and preset it for 3 hours. In a large bowl, mix brown sugar, walnuts, margarine, and cinnamon. Fill the apples with the filling and place them in the crock-pot. Pour in the apple juice or cider and the liquor, if using. Cover and cook 2 1/2 to 3 hours on high heat until the apples are soft and begin to collapse.  Yields 6 servings.

Crow Fudge!

I’m pretty sure that I could eat candy corn until I turn orange!  Could you?  Once I start, I can’t stop!

What could be better than candy corn, you ask?  Candy corn fudge!  That’s what!

Candy Corn Fudge

  • 1 7-oz. jar marshmallow cream
  • 1 1/2 cups sugar
  • 2/3 cup evaporated milk
  • 2 tablespoons unsalted butter
  • 2 cups candy corn (about 12 oz.)
  • 1 cup semisweet chocolate chips
  • 1. Line an 8-inch square pan with foil; butter foil. Combine marshmallow cream, sugar, evaporated milk and butter in a large, heavy pan. Bring mixture to a boil over medium-high heat. Cook, stirring constantly, until mixture reaches 235°F on a candy thermometer, 10 to 15 minutes.
  • 2. Remove from heat and stir in candy corn and chocolate chips, stirring until chocolate melts. Immediately transfer to foil-lined pan and smooth top until even. Chill until set, at least 2 hours.  Cut into one inch squares.
This is pure evil!  Appropriate for a Halloween treat, don’t you think?  Do you love candy corn?

A Shore Thing

You’ve gotta love a recipe with only three ingredients!  Especially when it’s the main dish!  I just spotted this ‘keeper’… I think you’ll like it…

Shrimp On Skewers

3/4 lb. of large fresh shrimp, peeled and deveined

4 large sprigs fresh rosemary (about 8″-9″ in length)

1/2 cup Italian salad dressing

Skewer shrimp onto rosemary skewers, using 3-5 per skewer depending on the size of your shrimp.
Place skewers in a shallow dish and pour Italian dressing over them.  Refrigerate for one hour.
Spray grill with nonstick spray and preheat to medium.
Grill skewers until shrimp are pink and firm, about 2-3 minutes per side.  If your grill has a cool side, aim the tops of the rosemary towards the cool side, although don’t worry it it gets charred.
Remove from grill and serve immediately.
